Shochu by Mastu no stuyu brewers


Nichinan city in Miyazaki prefecture, kyushu makes shoshu using traditional methods. This small sake brewer has been producing high quality.

One shochu produced by this brewer is "Hitomukashi" this blended sake is matured over a long pried of time, with special attention paid to the quality of the shochu color, smell, and of course, taste. This processes continued until the shochu is 40% alcohol.
It is then bottled, (with no added water) checked and labeled by hand.
This whole process is done by hand with great care. Not surpassingly, this shochu is rare and high prized.

Comments

There two type of shochu, one is reasonably prices, mass produced and intended general market. The other type is expensive, rare and very high quality for connoisseurs of shochu.

"Hitomukashi" and "Hyakunen no kodoku" (this shochu is from same area but a different brewer) belong firmly in the latter category, belong much sought after all over Japan.
